Ingredienser:

1 hel kylling

2 stk løg (hakket)

1 hel hvidløg (lille)

60 ml sojasovs

1 16oz klar sodavand

½ tsk jord sort peber

salt til krydderier

Hvordan man laver mad:

Bland løg, hvidløg og sojasovs i en gryde.

Tilsæt klar soda og sort peber til blandingen.

Læg hele kyllingen i gryden, dæk med låget, og lad det koge i medium varme i 45 minutter.

Min mor tilføjer typisk kyllingelever, når den simmer. Nogle af vores naboer tilføjer også en pakke bananketchup til den indledende blanding, men min mor kan ikke lide det med ketchup.

Vi spiser heller ikke det bedst. Vi lader det typisk køle ned og lægger det i køleskabet i timevis, i nogle tilfælde natten over, før de serveres. Det smager bare bedre, når kyllingen har absorberet saucen.

Batangas bulalo opskrift

3 lbs oksekødskank

5 Calamansi

3 stk rød chili

1 liter vand

Hvordan man laver mad:

Hæld vand i en stor gryde og kog op.

Tilsæt oksekød, hvidløg, løg, peberkorn og fiskesauce. Dække over.

Sog i 1,5 til 2 timer eller indtil de er mørt. Hæld ud af afskum.

Når oksekødet er mørt, skal kål og simre i yderligere fem minutter.

Efter fem minutter skal du tjene det med Calamansi og Chili.

Sauté garlic and onion over low heat using star margarine and cooking oil until garlic is golden brown.

Add tomato sauce, ketchup, pickles, soy sauce, pepper, and salt. mix well for thirty seconds then cover lid for three minutes.

Put pork and pour one cup of water. mix gently then cover for thirty minutes as it simmers.

Once meat is tender, add carrots, potatoes, green peas and chickpeas. mix gently. Cover for another 15 minutes.

Add liver spread and bell pepper. mix well then cover for another five minutes.

Pochero is one of my favorite dishes. once when I was new to Manila, I purchased it at a restaurant, but was shocked to be served a bowl of soup with meat and vegetables. In Batangas, yes there are vegetables and meat, but it is not a soup dish. Pochero in Batangas has tomato-based sauce, not soup. Here’s how to make it.

Ingredienser:

1 kg of pork (kambayado)

1 carrot (slice in to cubes)

¼ beans (slice)

1 bottle of banana ketchup

1 potato (sliced into cubes)

1 tomato sauce

5 pcs of laurel leaves

1 teaspoon of ground black pepper

1 tablespoon of fish sauce (patis)

1 PC of garlic (crushed)

1 PC of onion (minced)

4 pcs of hotdog (sliced)

3 tablespoons of margarine

½ cabbage

Hvordan man laver mad

Fry the pork in medium low heat. sæt til side.

Sauté garlic, onion, potato and carrots. mix well. Cover for 5 minutes.

Add tomato sauce, ketchup, ground pepper, and fish sauce. mix well. Cover for another 10 minutes.

Add the cabbage then mix well. Cover for five minutes.

Lower heat then add the fried pork. mix in gently for two minutes.

When it concerns savory finger foods, nothing beats crunchy lumpiang shanghai in my book. The blend of meaty and herby taste gives it a distinct taste that is great for the holidays. It’s easy to eat and can be munched on while catching up with friends and family. Pwede ring pulutan!

Ingredienser:

¼ ground pork

2 pcs onion, minced

1 PC of carrots, minced

1/8 teaspoon of salt

¼ teaspoon of black pepper

¼ teaspoon of magic sarap

1 egg

kinchay leaves (Asian celery)

lumpiang shanghai wrappers

Hvordan man laver mad:

Mix all the ingredients above (except the wrapper) in a bowl. sæt til side.

Put a teaspoon of the mixture on a lumpia wrapper and make a roll.

Do it until you finish all the meat mixture.

In a pan or wok, fry or deep fry the rolls in cooking oil over low heat. If you’re not deep-frying, make sure to flip the rolls.

Serve when ready.

This isn’t really lutong bahay but still relevant.

Many Filipinos believe that having round fruits on new Year’s Eve will bring good fortune in the coming year. Hence, fruits become so available before the year ends: Supermarkets fill their crates with local and imported fruits, and fruit stands mushroom along the road. No wonder why even those who don’t believe or practice Feng Shui still end up having lots of round fruits on their medianoche table. They’re just readily available everywhere.

If you believe in Feng shui, experts say that some fruits are luckier than others. According to a report by ABS-CBN, the following are considered lucky fruits: lychees, pomelos, pineapples, oranges, apples, grapes, and watermelons.

If you don’t believe in feng shui, that’s okay. but still consider having fruits! They’re healthy and delicious anyway. Haha.

What was the weirdest moment during your year abroad?

While questing for a unique cultural experience, we found ourselves in a Dayak longhouse in remote Borneo during a funeral ceremony.

Custom dictates that the skulls of the deceased’s relatives are exhumed for the celebration; those that haven’t properly decomposed yet are substituted with coconuts with faces drawn on them.

Through an unusual twist of fate (and by that I mean the family looking for entertainment), I was invited to dance in the ceremony. unable to remember the traditional steps, however, I ended up doing something that closer resembled the time Warp.

Part of It’s only the Himalayas’s charm is the self-deprecating humour and your honesty regarding your foibles, insecurities and mistakes—not to mention your, ah, misadventures in promiscuity. Was it challenging to be this open with the audience?

There are many travel blogs and Instagram accounts which portray backpacking as stunning and glamorous, and backpackers as these sage wanderers who can scale a mountain at dawn without scuffing their Toms.

I wanted to show the world that:

1) You don’t have to be some polyglot anthropologist who can twist open a coconut with your bare hands to travel; og

2) Life on the road ain’t always pretty.

When writing the book, I struggled with how frank I should be, and eventually decided to be totally honest and try not to think about my pals and family reading it. on that note, I censored my parents’ copy with liquid paper and a box cutter.

What was the biggest cultural difference you encountered during your travels?

When I was in Lhasa, I witnessed Tibetan Buddhists making the pilgrimage to and around Barkhor Square.

Most people just walked, but some carried out the ritualistic mode of locomotion by reaching skywards, then moving on their bellies… the whole way there.

Depending where they came from, it could be a months-long journey. between that and the monasteries where monks devote their lives from childhood to piety is a religious commitment I never encountered back in Canada.

The new York Times summarizes your book as “A Canadian waitress who swears like a fishwife goes to Boracay.” how do you feel about that?

Well, first I had to look up what a fishwife was. In all seriousness, being discussed in the Times is a enormous honour—I want that phrase needlepointed on a pillow or something. surely somebody on Etsy does that?

What advice do you have for people considering their own round-the-world trip?

Bare gå.

Whatever sacrifices you need to make (living on ramen noodles and fruit cups while you save up, for example) are worth it.

Before I could respond with “We’re staying outside the church?” complete with a half-joking half-violent look to match, my eyes caught the big bold letters that adorn the edge of the plateau — hotel Maya.

Hotel Maya is perhaps the most well-known in the few lodges in Culion and it’s not difficult to see why. From the moment we set foot on the island, we were treated with utmost kindness and hospitality.

Isla Culion hotel Maya stands next to the town church and fortress. set on a cliff and facing east, it allows an unobstructed view of one of the most spectacular breaks of dawn I had seen. From the hotel, all the other major points of interest in town are very accessible. The Culion museum and Archives is within a five-minute walk while the shore is just a few yards eastward. and since it rubs elbows with the church, often the center of the town, hotel Maya is surrounded by stores, eateries, and other landmarks including the hospital and sanitarium, and the plaza.

Accommodations and Rates. Their cheapest is the P700 single room (fan only). since we were a party of two, we initially wanted to take the double room (fan only) which was at P1,100 but when we were taken to a corner room for a quick view, we opted to take it instead. adding to the large size of the room, the cool wind was just so refreshing as they pass through the wide windows. The view of the sea was also enough to seal the deal, especially when they told us we could watch the sunrise from the room.

Staff and Service. We felt the warmth of their welcome even before we hopped out of the boat. Kuya Toto, one of the staff, was waiting with us at the pier. He then led us to the tricycle that would take us to the hotel. He introduced us to Jona, who greeted us with a welcome drink and a flower necklace, a small but impactful gesture. Kuya Toto and Jona took really good care of us, attending to our every need and providing information whenever we had questions. They also guided us on a tour around the town.

My friend Mica had an agenda. Culion Island had always been on my I’m-not-dying-until-I-visit list but it was out of sheer curiosity and insatiable thirst for the unusual. Mica was here for a more personal reason. I am one to always take charge in building itineraries but for this trip, Mica took ever. Her motivation, which intrigued me since the beginning, drove her to meticulously plan this trip on her own. I took the backseat for this one and I’m delighted I did. Blindly, I followed her when she decided that we stay overnight on the island instead of doing the usual day tour, and when she chose the place to stay. and everything turned out flawless.
